Beaufort, Noix de Grenoble walnut and rocket tart recipe
Some history
The world’s first fruit to be granted the AOC title in 1938, the Noix de Grenoble walnut is a natural source of energy, zinc, copper and potassium. It is also rich in Omega 3 and arginine and is an effective anti-aging ingredient thanks to its high Vitamin E content. It’s also a real memory booster: don’t forget to eat walnuts for their phosphorus content.
Ingredients
The tart:
- 1 roll of short crust pastry
- 800g Beaufort cheese
- 500ml milk
- 500ml cream
- 4 eggs
- 4 egg yolks
- salt, pepper,
- nutmeg
The salad:
- Rocket
- Balsamic vinegar
- Olive oil
- 80g of walnut kernels
Preparation
Line your pie dish.
Mix the milk, cream, eggs, egg yolks, salt, pepper and nutmeg, and beat with a whisk for one minute.
Grate the Beaufort, spread it over the bottom of the dish and pour in the mixture.
Cook for around 40 to 45min at 170°C.
Assemble the rocket salad with the Noix de Grenoble walnuts and serve.
