Fougasse recipe
Some history
Fougasse is bread from Provence. Originally, it was a piece of bread dough put into the wood-fired oven to check if it was at the right temperature to bake the batch of the day.
Ingredients
- 500g flour
- 10g salt
- 3g sugar
- 25g baking powder
- 25cl water
- Provencal herbs
- 11cl olive oil
Preparation
Knead everything for 3 to 4min.
Then let it rise once for 30min in a warm place.
Then roll and pat to shape, let it rise again.
Sprinkle water and olive oil on the top and bake.
