Morbier, mountain honey and rosemary muffins recipe

Some history
Morbier owes its name to the village of Morbier, located in the Jura Mountains.
Ingredients for 6 people
- 3 eggs
- 2 branches of rosemary
- 70g butter
- 7cl olive oil
- 10cl milk
- 200g flour
- 1 sachet of baking powder
- 2 tablespoon mountain honey
- 110g Morbier
- salt, pepper
Preparation
Separate the egg whites from the yolks.
Mix the egg yolks with the milk, melted butter and olive oil.
Season with salt and pepper.
Add the flour and baking powder, then the honey and finely chopped rosemary, and then the Morbier cheese cut into cubes.
Whip the egg whites into stiff peaks and incorporate them delicately into the previous mixture.
Pour the preparation into buttered muffin moulds.
Bake for 25min at 180°C. Serve lukewarm.
