Panzanella style salad with blackberries
Some history
Panzanella: This is the quintessential Italian salad! A dish typical of central Italy, it is usually made with stale bread, onions and tomatoes, plus a drizzle of olive oil. But it’s up to you which vegetables (and fruit) you use, depending on what’s in season.
Ingredients
For the salad:
- 800g cherry tomatoes (various colours)
- 150g blackberries
- 1 red onion
- Half a bunch of basil
- 3tbs olive oil
- 1tbs balsamic vinegar
- 1 burrata
- Salt and pepper
For the croutons:
- 2 slices rustic country bread
- 2tbs olive oil
- 1 pinch of sea salt flakes
Preparation
Dice the bread and place in a salad bowl with the olive oil and sea salt flakes. Mix thoroughly, then fry for a few minutes until golden. Reserve.
Wash and halve the tomatoes.
Finely slice the red onion.
Wash and halve the blackberries.
Mix the tomatoes with the blackberries, onion and croutons.
Add the chopped basil, olive oil, balsamic vinegar, salt and pepper.
Chill for 1 hour, then serve with the burrata.
