Polenta bread and salad recipe

Ingredients
- 1 packet of polenta (approx. 250g)
- 1 large red onion
- Olive oil
- salt, pepper
- Lettuce
Preparation
Toss the polenta into 1 liter of salted boiling water and stir continuously for 5min: the polenta mixture should fall away from the sides of the pan after absorbing all the water.
Cut the onion into thin slices and brown it in a small frying pan containing hot olive oil.
Mix the onion and oil into the hot polenta.
Pour into a flan dish or cake mould and leave to cool.
Before serving, cut the polenta into portions and brown each side for a few minutes in the frying pan.
Add salt and pepper.
Serve with lettuce leaves.

You can add other vegetables to this recipe like tomatoes, pumpkin, aubergine, etc.
