Some history

Cobbler: Red fruit cobbler is an American dessert that dates back to the arrival of the first settlers. Like a crumble, a cobbler is a dessert that can be made with whatever fruit you happen to have in your kitchen.

Ingredients

  • 2 apples
  • 750g red fruit (redcurrants, strawberries, raspberries, cherries)
  • 1tbs cornflour
  • 100g flour
  • 50g almond powder
  • 1tsp baking powder
  • 30g unrefined brown sugar
  • 50g cold butter
  • 12cl milk
  • 1 vanilla pod
  • Handful of flaked almonds
  • A pinch of salt

Preparation

Heat the oven to 200°C (390°F).
Peel and dice the apples, then place in a baking dish. Mix the (chopped) red fruit with the cornflour, then add to the apples.
Combine the flour, almond powder, baking powder, sugar and cold butter until you obtain a crumbly texture. Add the milk, (scraped) vanilla seeds and salt, then mix until the pastry has a smooth consistency.
Roll the pastry on a floured worktop until about 1cm thick, then cut out 8 pastry discs. Arrange the discs on the fruit mixture.
Brush them with a little milk and sprinkle with sugar.
Bake for 25 minutes. Half way through, add the flaked almonds. Serve warm.
