Matafan apple pancakes recipe
Ingredients
- 4 apples
- 125g plain flour
- 2 eggs
- 1 soup spoon of oil
- 2 soup spoons of fruit brandy
- 1 sachet baking powder
- 4 soup spoons of powdered sugar
- salt
Preparation
Peel and slice the apples.
Take a baking dish and mix the flour in it with a pinch of salt along with the eggs beaten to omelette consistency, the brandy, the baking powder, and the sugar.
Add 10cl of warm water to obtain a smooth mixture, not too thick.
Add the apple slices.
Take a non-stick frying pan, heat the oil in it and put the preparation in.
Cover and leave to cook over a low heat for 30min.
Turn the matafan over (slide it onto a plate then flip sides) to cook the other side.
Serve hot or warm.

To vary the pleasure, you can also make a savoury matafan with bacon and cheese.
