Ingredients
- 120g flour
- 250g sugar
- 60g potato starch
- 5 eggs
- 1 lemon peel or vanilla essence
Preparation
Separate the egg whites and yolks.
Whisk the yolks with the caster sugar until they become frothy.
Add flour and starch, lemon peel or vanilla essence, and mix smoothly to a paste, avoiding lumps.
Beat the egg whites stiff then fold them delicately into the mixture.
Bake at 180 °C for 45min in a cake mould that has been buttered and sprinkled with flour.
